
1. I have to apologize, again, for so sadly neglecting my little piece of cyberspace. The end of the semester means lots of work, and I haven't been on the computer much from home due to the sad demise of one of our computer power cords. Since Paul has been studying nonstop for the past couple of weeks, his use of the remaining cord is just a smidge more important than mine.
2. Speaking of Paul and studying, he will be 2/3 of the way done with law school by noon today. SO EXCITING. He starts his summer job with a local firm on Monday.

3. Here's one of my favorite pictures from the amazing wedding I went to back home two weeks ago. I love these girls so much. (You can check out the high school versions of us in my last post.)
4. We have yet another wedding to attend this weekend. This one is here in South Bend, so no traveling (a relief, since I've barely recovered from the whirlwind trip for the last one). It should be interesting--the ceremony is at NINE A.M.(!!!), because they're marrying in the Basilica here on campus, and you basically have to take the timeslot the Basilica Wedding Nazis assign or wait until the lottery reopens for the next year (no, really). Early morning ceremony means a brunch reception, though, which is great. Brunch food is wonderful.
5. I've recently discovered that I really enjoy fresh avocado. I've been mashing it up with a little salt, pepper, and garlic and using it as a salad dressing. Yum! It helps that Aldi has had avocados on sale for $0.60 a piece recently.
6. My other recent culinary adventure is homemade walnut butter. I really hate peanut butter (don't know why -- I love peanuts. I think it might be due, at least in part, to how sweet commercial peanut butter is. Whatever causes it, the bottom line is that peanut butter is disgusting), but I wanted to try making some alternative because nuts are such a good, filling snack. It could not have been more simple. I whirred 3 cups of walnuts in my food processor with some salt until it was the consistency I wanted (stopping a couple of times to scrape down the sides of the processor bowl). It was really interesting to watch it come together -- first you get small walnut pieces, then flour, then the oils release and you get creamy walnut butter. I didn't measure, but I'd estimate that the 3 cups of nuts gave me between 1 and 1.5 cups of walnut butter. I put it in the fridge, and it has held up very well. This stuff is particularly delicious spread on celery stalks. I like that it avoids the chemical preservatives and added sugar (and disgustingness) of peanut butter, and making it myself was much, much, much cheaper than any of the storebought non-peanut nut butter I've seen.
7. I really wish I were motivated enough to keep our apartment "company clean" all the time. I feel so much better when it's at that level than I do at the "unremarkable, but liveable" level at which I keep it most of the time. I am so, so looking forward to the day when I don't have an 8-5 job that tires me out and leaves me with only weekends for the work I really enjoy.
