I also made the amazing souffle cupcakes I mentioned in my last Quick Takes post. The recipe can be found here. I left out the mint/white chocolate cream, since I don't care for white chocolate (and I forgot to buy cream). To make up for the missing mint flavor, I substituted peppermint extract for the vanilla in the batter. They are slightly crisp at the top and perfectly soft and fluffy in the middle, with a rich chocolate-mint flavor. Yum!

Valentine's Dinner
Behold the pizza I made for our Valentine's Day dinner:
The other day, Paul mentioned that it had been a while since I made a pizza, so I decided to make one as his Valentine's present. I used a new crust recipe that turned out quite well. This one has minced garlic in the dough. I topped the pizza with pepperoni, coarsely chopped green olives, and a mixture of gruyere and goat gouda cheeses (because I had them on hand and they needed using). Before baking, I brushed the crust with herbed olive oil.

You are an overachiever. That is all.
No way. I have a bread machine. Pizza dough (or any other bread) is stupid easy. The cupcakes were deceptively simple, too.
Besides--I saw your surf and turf picture. Who's the overachiever?
That would be Jacob- who does all the good cooking in our household. He is addicted to the show Top Chef, so every special occassion he feels inspired to cook a good meal. I, on the other hand, do most of the day-to-day cooking and I pretty much stick to the hamburger helper side of life, ha ha.
And I don't care how easy you make it look- you're still an overachiever.
